Here's another single barrel release from our very limited colleciton of ex-peated casks, coming to you just in time to bring a bit of smoke to your whisky action this winter.
Unsmoked Marris OtterⓇ barley was mashed and fermented with a single saison yeast strain for fruity banana top notes and a nutty, buttery body. The distillate was then collected from the second pot distillation and filled into a heavily peated Scotch Whisky cask from an easily recongnisable Islay distillery and rested for 4.5 years.
The result... juice that is very much a tale of two sides woven together, with a smoke coming unexpectedly on the palate from a seemingly delicate nose. Something a peated malt spirit would find almost impossible to achieve.

ABV: 61.1%, cask strength
Banana Nesquik, Peanut Butter, Sea Salt, Ginger, Seaweed, Bell Pepper, Lucky Strike, Ferry.
100% Maris Otter malted barley from Norfolk, 375kg per mash.
105 hour fermentation with 24-36 further hours lactic acid rest before distillation.
